The key issues
Several VAT rates
Eat-in, takeaway, delivery, alcohol: one receipt can combine several rates. Correct till settings avoid errors.
Food and staff costs
A few points of margin make the difference at year end; tracking them helps adjust the menu in time.
Hospitality payroll
The HCR collective agreement, meals, overtime, extras and public holidays: payroll with its own rules.
Tills and cash
Certified till, daily receipts, card and delivery platform payments to reconcile.

The forecasts, cash-flow plans, dashboards, simulations, studies and analyses mentioned above are additional engagements, provided on request and quoted in advance in your engagement letter: the more frequent they are, the higher their cost.
Frequently asked questions
Which VAT rate applies in a restaurant?
It depends on what is sold and how: food eaten in or taken away, alcoholic drinks, delivery. Your till must be set up accordingly.
How are tips handled?
Tips paid by card are passed on to staff under specific rules; their social and tax treatment has its own regime.
How are delivery platform sales recorded?
Platform statements are reconciled with payments; commissions are recorded as expenses and VAT on sales is declared on the full price.
How do I prepare to take over a restaurant?
Analysis of the seller’s accounts, the lease, equipment, licence and staff taken over, then forecast and financing plan, on request, together with your lawyer or notary.
Do I need certified till software?
Yes: a business subject to VAT that records sales to private customers in a till system must use software meeting the conditions of inalterability, security, storage and archiving, with a certificate or attestation from the publisher.
